Vegetable recipe

Vegetables are not the most fun stuff to eat. Tons of people hate vegetables mainly because you can't really place their taste. Let's face it a lot of vegetables don't taste nice period!

I do enjoy vegetables that are well prepared especially the leafy ones like spinach, which also happens to be a good source of folic acid like I mentioned earlier.

I will go on to give you one of my personal recipes. It is quick to prepare, can be made with any kind of vegetable and served with rice, potatoes or yam. You can even eat it alone if you wish.

Here we go.....

VEGETABLE SAUCE (SPINACH)

400g fresh or frozen spinach ( doesn't  matter if its chopped or whole)
1 clove garlic, finely chopped
1 onion, thinly sliced
1 red pepper, chopped
2 tomatoes, chopped
1 tablespoon oil ( olive oil is best but you can use vegetable oil if you don't have olive oil)
Sardines or salmon (1tin if using the tinned one)
450g cooked prawns
150ml chicken stock ( 2/3 cup)
2 stock cubes or 2 tablespoons of fish sauce (which ever you prefer)


Put a fry pan over medium heat and add the olive oil. Add the garlic, onion and red pepper to the fry pan. Stir for 1-2 minutes. Add the tomatoes and stir for 2 minutes. Add the chicken stock and fish sauce or stock cubes, stir and cook for 2 minutes then add the prawns and sardines or salmon, cook for another 2 minutes. Finally add the spinach. If frozen, until defrosted and heated all through but if fresh, cook for 2-3 minutes. Then serve with rice, potatoes or yam.

That's done. Easy peasy right?

Remember you can tweak it as you want, to suit you. You can add more spinach if you wish, it is after all, all about the vegetable isn't it?
